So out of MDF or particle board what are most of you going for? Given that MDF although more expensive has much better moisture protection.
Another option is to use "treated" particle board which has a resin injected into it ,protecting against moisture.
Most of the kitchen manufacturers are not using the treated particle board unfortunately except Peter Hay kitchens .
Away from the sink areas you could probably be OK without worrying to much about water ingress.
